Vegan SCHNITZEL with french fries and vegan mayonnaise

This vegan schnitzel with french fries and vegan mayonnaise is inspired by the wiener schnitzel that I used to like during our travel in Austria, only this one is the cruelty-free one and tastes as good as the original one!

For the schnitzel batter:

  • 100 gr chickpeas flour
  • 1 tsp sriracha sauce
  • 1 tsp dried oregano
  • Salt and pepper
  • 200 ml water

For the tofu marination

  • 1 tbsp tamari sauce
  • 2 tbsp dark soy sauce
  • 1 cm ginger (minced)
  • 1 clove garlic (minced)
  • ½ tsp cayenne pepper
  • 1 tsp sesame oil
  • Salt and pepper

For the schnitzel

  • 250 gr tofu
  • Panko breadcrumbs
  • Prepare marination by mixing all the marination ingredients in a bowl.
  • Cut the tofu into big thin slices (0,5 cm thick) then put them inside the marination bowl, leave them to rest in the fridge for at least 30’. However, for a maximum result, they must be marinated for 3 hours.
  • Prepare the batter by mixing all the batter ingredients in a bowl and let it rest for at least 15 minutes to get the thick batter.
  • Once the tofu is ready, cook them using the air fryer at 180°C (you can fry it in the pan or bake them in the oven) for around 15 minutes and flip them halfway.
  • After the tofu is cook, dip it into the batter then cover it evenly with panko breadcrumbs.
  • As a final step, cook the tofu in the air fryer (or bake them in the oven) at 180°C for 15 – 20 minutes or until golden brown, flip halfway.
  • Serve them hot with vegan mayonnaise and the healthy version of French fries.
