Avocado TOAST with Vegan Scrambled Egg

Avocado toast with vegan scrambled egg is a dish that can be enjoyed either for breakfast, quick lunch, or just a healthy light bite. If you love toast and scrambled eggs, this dish will satisfy your craving!

  • 2 pcs of whole wheat bread
  • 125 gr natural firm tofu
  • 2 cherry tomatoes
  • 1 teaspoon curry
  • 1 teaspoon turmeric
  • 1 tablespoon nutritional yeast
  • ½ teaspoon chili flakes (if you like spicy)
  • 1 teaspoon dried oregano
  • Extra virgin olive oil
  • 2 teaspoon of hemp oil
  • Salt and pepper
  • 1/2 mature avocado (thinly sliced)
  • Prepare the vegan scrambled eggs and leave it aside.
  • Heat the bread in a toaster or in a pan.
  • Put the scrambled tofu on the warm bread, add the sliced avocado, sprinkle salt and pepper.
  • As for the last step, add the hemp oil on top and your toast is ready.
